Strawberry Salad

Winter is just an excuse for stodgy, unhealthy, amazing food but Spring is the perfect time to get back into healthy eating and a salad is the best way to start.

Fruit in a salad may sound a little odd, but strawberries work really well with the crunchy iceberg and if you haven’t tried strawberries and balsamic vinegar, then you’re in for a treat!


To make:

Chop up your favourite salad ingredients and scatter some strawberries and balsamic vinegar over the top.

I used:

  • iceberg lettuce
  • strawberries
  • grated carrot (with some carrot sticks and hummus at the side)
  • sundried tomatoes
  • roasted pepper
  • a small handful of pumpkin/sunflower seeds
  • extra virgin olive oil and balsamic vinegar
