I thought I’d introduce a new section of my blog where I round up all the great things I’ve been cooking and all the places I’ve been eating while out and about. The past month has been a big one for me, I’ve celebrated my 20th birthday, finished my exams and at the end of June I will be going to New York with my mum and sister!
We’ll start the adventure with my birthday because it was a crackin’ one, I begun the celebrations at uni where my housemates made me a Betty Crocker cake with a can of diet Coke and smothered it in the Betty Crocker chocolate fudge icing. It was surprisingly amazing and everyone who tried it said they couldn’t tell it wasn’t made with eggs.
I’ve also been spending a lot of time at The Mad Cucumber vegan lounge in Bournemouth, it’s a one of a kind cafe in the Triangle where everything is vegan. I’m so glad something like it exists in Bournemouth because the homemade vegan food reminds me of home while I’m at uni.
Now for a bit of cooking talk, I have recently become obsessed with scrambled tofu, I’ve dabbled in it before but this recipe but Minimalist Baker is a real game changer, so much flavour and super filling too, perfect to have before a long day. Vegan Life also did a fabulous looking scramble in issue 5 – make sure you catch issue 6 which is out now!
